Yield: 12 balls
Great pairing: soy sauce, game soup with ginseng
Ingredients:
- 1 egg, yolk and white separated
- 220 g wonton dough (Chinese dumplings)
- 450 g crab meat or sticks
- 1 tsp salt
- 1 tsp sugar
- 1 tbsp corn starch
- Pinch of red and black pepper
- Oil for frying
Preparation:
In a small bowl, beat the egg white with a little water for a few minutes. Set aside.
Cut the wonton dough into very thin strips and set aside.
In a blender bowl, mix the crab meat, salt, sugar, starch, yolk, and spices.
In a small saucepan, pour oil to a thickness of 5 cm. Shape the crab meat into balls about 5 cm in diameter.
Dip each ball in the beaten egg white, then roll it in the strips of dough to cover all the meat, and gently press to ensure the strips stick.
Lower the resulting balls into hot oil and cook for a few minutes until the dough becomes crispy and fully cooked.
